- 4 cups zucchini noodles (zoodles)
- 2 tablespoons unsalted butter
- 1 tablespoon fresh lemon juice
- 2 tablespoons fresh parsley, chopped
Instructions
- Heat olive oil in a large skillet over medium heat.
- Add minced garlic and cook until fragrant, about 30 seconds.
- Add shrimp, salt, and pepper. Cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
- Add zucchini noodles to the same skillet. Cook for 2-3 minutes, until slightly tender.
- Stir in butter and lemon juice. Cook until butter is melted and coats the zoodles.
- Return shrimp to the skillet. Toss to combine and heat through.
- Garnish with fresh parsley and serve immediately.
