Ingredients

  • 2 cloves garlic, minced

  • 1 teaspoon chili garlic sauce (or to taste)
  • 8 ounces ramen noodles (fresh or dried)
  • 1 cup cooked chicken or tofu, shredded or cubed
  • 2 soft-boiled eggs, halved
  • 1/4 cup sliced green onions
  • 1/4 cup nori strips
  • 1/4 cup corn kernels


Instructions

  1. Heat sesame oil in a large pot over medium heat. Add garlic and ginger and cook until fragrant, about 1 minute.
  2. Pour in the broth, soy sauce, mirin (if using), and chili garlic sauce. Bring to a simmer.
  3. Add ramen noodles to the simmering broth and cook according to package directions, usually 3-5 minutes for fresh noodles or 5-7 minutes for dried.
  4. Divide noodles and broth between two bowls.
  5. Top each bowl with cooked chicken or tofu, halved soft-boiled eggs, sliced green onions, nori strips, and corn kernels.
