Description

Discover the secret to the absolute moistest chocolate chip zucchini bread. This recipe is easy to follow and results in a tender, delicious loaf perfect for any occasion. Savana Loyal shares her family’s beloved recipe, emphasizing simple ingredients and comforting flavors from the 911Recipes family kitchen.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup grated zucchini (about 1 medium zucchini), squeezed dry
  • 1 cup chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×5 inch loaf pan.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, and nutmeg.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. Gently fold in the grated zucchini.
  6. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
  7. Fold in the chocolate chips.
  8. Pour the batter into the prepared loaf pan and spread evenly.
  9. Bake for 50-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  10. Let the bread cool in the pan for 10-15 minutes before transferring it to a wire rack to cool completely.

Notes

  • Make sure to squeeze out as much moisture as possible from the grated zucchini. This is key to a moist bread that isn’t dense.
  • For an extra moist loaf, you can add 1/4 cup of sour cream or Greek yogurt to the batter.
  • If you prefer, you can substitute the chocolate chips with chopped nuts like walnuts or pecans.
  • The bread can be stored at room temperature in an airtight container for up to 3 days.
