- 1 package (10 count) refrigerated pie crusts
- 2 large apples (like Granny Smith or Honeycrisp), peeled, cored, and diced small
- 1/4 cup granulated sugar
- 1 tablespoon all-purpose flour
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1 tablespoon lemon juice
- 1 tablespoon unsalted butter, cut into small pieces
- 1 egg, beaten (for egg wash)
- Coarse sugar, for sprinkling (optional)
Instructions
- In a medium bowl, combine the diced apples, granulated sugar, flour, cinnamon, nutmeg, and lemon juice. Toss gently to coat the apples evenly.
- Gently melt the butter in a small pan or microwave, then stir it into the apple mixture. Set the filling aside.
- Lay out your refrigerated pie crusts. Use a 4-inch round cutter to cut circles from the dough. Reroll scraps as needed.
- Spoon about 1-2 teaspoons of the apple filling onto one half of each dough circle, leaving a border around the edge.
- Brush the edges of the dough lightly with the beaten egg wash. Fold the empty half of the dough over the filling to create a half-moon shape.
- Crimp the edges firmly with a fork to seal the empanada completely. Make sure they are well sealed.
- Lightly spray the air fryer basket with non-stick cooking spray.
- Place the empanadas in a single layer in the air fryer basket, working in batches. Do not overcrowd the basket.
- Lightly brush the tops of the empanadas with the remaining egg wash and sprinkle with coarse sugar, if using.
- Air fry at 375°F (190°C) for 8 to 10 minutes, flipping halfway through, until they are golden brown and the filling is bubbly.
- Let the empanadas cool slightly on a wire rack before serving. Enjoy your sweet treat!
Notes
- For extra crispiness, lightly spray the tops of the empanadas with cooking spray before adding the egg wash.
- If you do not have pie crusts, you can use large flour tortillas cut into circles. Adjust cooking time as needed.
- These are best enjoyed warm, perhaps with a scoop of vanilla ice cream!
