- 4 ears of corn, husked
- 2 tablespoons mayonnaise
- 2 tablespoons sour cream or Mexican crema
- 1/2 cup crumbled cotija cheese
- 1/4 cup chopped fresh cilantro
- 1 tablespoon lime juice
- 1/2 teaspoon chili powder
- Pinch of cayenne pepper (optional)
- Salt to taste
Instructions
- Preheat your air fryer to 375°F (190°C).
- Lightly brush the husked corn ears with a thin layer of mayonnaise. This helps them crisp up and holds the seasonings.
- Place the corn in the air fryer basket in a single layer. You may need to cook in batches depending on your air fryer size.
- Air fry for 12-15 minutes, flipping halfway through, until the corn is tender and slightly charred in spots.
- While the corn cooks, prepare the sauce. In a small bowl, combine the remaining mayonnaise, sour cream or Mexican crema, lime juice, chili powder, and cayenne pepper (if using). Mix well.
- Once the corn is done, carefully remove it from the air fryer.
- Spread the prepared sauce generously over each ear of corn.
- Roll the corn in crumbled cotija cheese until evenly coated.
- Sprinkle with fresh cilantro and a pinch of salt if desired.
