Description

A classic, creamy macaroni salad recipe popular in Amish communities.

Ingredients

Scale
  • 1 pound elbow macaroni
  • 1 cup mayonnaise
  • 1/2 cup granulated sugar
  • 1/4 cup apple cider vinegar
  • 1/4 cup milk
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 cup finely chopped celery
  • 1/2 cup finely chopped onion
  • 2 hard-boiled eggs, chopped

Instructions

  1. Cook macaroni according to package directions until tender. Drain well and rinse with cold water to stop cooking. Set aside.
  2. In a large bowl, whisk together the mayonnaise, sugar, apple cider vinegar, milk, salt, and pepper until smooth. This is your dressing.
  3. Add the cooled macaroni, chopped celery, chopped onion, and chopped hard-boiled eggs to the dressing.
  4. Stir gently until all ingredients are evenly coated with the dressing.
  5. Cover the bowl and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to meld.
  6. Stir before serving.

Notes

  • For best flavor, chill the salad for a full 24 hours.
  • You can add 1/4 cup of sweet pickle relish for extra tang.
  • Use whole milk for a richer dressing consistency.
