Ingredients
Scale
- 2 cups apple cider
- 1/2 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking soda
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/4 teaspoon ground nutmeg
- 1/4 teaspoon ground cloves
- 1 cup buttermilk
- For the Glaze:
- 1 cup powdered sugar
- 2-3 tablespoons apple cider (unreduced)
Instructions
- Reduce apple cider: Pour 2 cups of apple cider into a small saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer until the cider has reduced to 1/2 cup. This will take about 15-20 minutes. Set aside to cool completely.
- Preheat oven to 350°F (175°C). Grease and flour a 10-12 cup bundt pan.
- In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Beat in the eggs one at a time, then stir in the vanilla extract.
- In a separate medium bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, nutmeg, and cloves.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk, starting and ending with the dry ingredients. Mix until just combined.
- Stir in the cooled, reduced apple cider until evenly incorporated. Do not overmix.
- Pour the batter evenly into the prepared bundt pan.
- Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10-15 minutes before inverting it onto a wire rack to cool completely.
- Prepare the glaze: In a small bowl, whisk together the powdered sugar and 2 tablespoons of unreduced apple cider until smooth. Add more cider as needed, 1/2 teaspoon at a time, until you reach your desired drizzling consistency.
- Once the cake is completely cool, drizzle the glaze over the top.
Notes
- Ensure the reduced apple cider is completely cool before adding it to the batter to prevent cooking the eggs.
- Do not overmix the cake batter; this can result in a tough cake. Mix until just combined.
- For an extra touch, sprinkle a cinnamon-sugar mixture over the glazed cake while the glaze is still wet.
