Instructions

  1. Reduce apple cider: Pour 2 cups of apple cider into a small saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer until the cider has reduced to 1/2 cup. This will take about 15-20 minutes. Set aside to cool completely.
  2. Preheat oven to 350°F (175°C). Grease and flour a 10-cup bundt pan.
  3. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. In a separate bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk and the cooled reduced apple cider, beginning and ending with the dry ingredients. Mix until just combined. Do not overmix.
  7. Pour the batter evenly into the prepared bundt pan.
  8. Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  10. Prepare the topping: In a small bowl, combine 1/2 cup granulated sugar and 1 teaspoon cinnamon.
  11. Once the cake is cool, brush the melted butter all over the cake, then sprinkle generously with the cinnamon sugar mixture.
