Instructions

  1. Reduce the apple cider: Pour 2 cups of apple cider into a small saucepan. Bring to a boil over medium-high heat, then reduce heat to medium-low and simmer until the cider has reduced to ½ cup. This will take about 15-20 minutes. Set aside to cool completely.
  2. Preheat oven and prepare pan: Preheat your oven to 350°F (175°C). Grease and flour a 10-12 cup bundt pan.
  3. Combine dry ingredients: In a medium bowl, whisk together the flour, baking powder, baking soda, cinnamon, nutmeg, cloves, and salt.
  4. Cream butter and sugars: In a large bowl, using an electric mixer, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3-4 minutes.
  5. Add eggs and vanilla: Beat in the eggs one at a time, mixing well after each addition. Stir in the vanilla extract.
  6. Alternate wet and dry ingredients: Gradually add the dry ingredients to the wet ingredients, alternating with the cooled apple cider reduction and buttermilk, beginning and ending with the dry ingredients. Mix until just combined; do not overmix.
  7. Pour into pan and bake: Pour the batter evenly into the prepared bundt pan. Bake for 45-55 minutes, or until a wooden skewer inserted into the center comes out clean.
  8. Cool and serve: Let the cake cool in the pan on a wire rack for 10-15 minutes before inverting it onto the rack to cool completely.
