Description

This apple cider donut cake gives you all the flavors of a classic apple cider donut in an easy-to-make cake form. It’s perfect for fall gatherings.


Ingredients

  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 1 tsp baking soda
  • 0.5 tsp salt
  • 1 tsp ground cinnamon
  • 0.25 tsp ground nutmeg
  • 0.25 tsp ground cloves
  • 0.5 cup unsalted butter, softened
  • 2 large eggs
  • 1 tsp vanilla extract
  • 0.5 cup buttermilk
  • 0.5 cup unsweetened apple cider, reduced to 1/4 cup


Instructions

  1. Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a large bowl, whisk together flour, sugar, baking soda, salt, cinnamon, nutmeg, and cloves.
  3. In a separate bowl, cream together softened butter and granulated sugar until light and fluffy.
  4. Beat in eggs one at a time, then stir in vanilla extract.
  5. In a small bowl, whisk together buttermilk and reduced apple cider.
  6. Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk mixture, beginning and ending with the dry ingredients. Mix until just combined.
  7. Pour batter into the prepared baking pan and spread evenly.
  8. Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
  9. Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
  10. Once cool, dust with powdered sugar or drizzle with a simple glaze (optional).

Notes

  • Reducing the apple cider intensifies the flavor. Simmer 1/2 cup of cider in a small saucepan over medium heat until it reduces to about 1/4 cup. Let it cool before using.
  • Make sure your butter is truly softened for best results.
