Ingredients
Scale
- 2 cups all-purpose flour
- 1.5 cups granulated sugar
- 1 tsp baking soda
- 0.5 tsp salt
- 1 tsp ground cinnamon
- 0.25 tsp ground nutmeg
- 0.25 tsp ground cloves
- 0.5 cup unsalted butter, softened
- 2 large eggs
- 1 tsp vanilla extract
- 0.5 cup buttermilk
- 0.5 cup unsweetened apple cider, reduced to 1/4 cup
Instructions
- Preheat oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
- In a large bowl, whisk together flour, sugar, baking soda, salt, cinnamon, nutmeg, and cloves.
- In a separate bowl, cream together softened butter and granulated sugar until light and fluffy.
- Beat in eggs one at a time, then stir in vanilla extract.
- In a small bowl, whisk together buttermilk and reduced apple cider.
- Gradually add the dry ingredients to the wet ingredients, alternating with the buttermilk mixture, beginning and ending with the dry ingredients. Mix until just combined.
- Pour batter into the prepared baking pan and spread evenly.
- Bake for 30-35 minutes, or until a wooden skewer inserted into the center comes out clean.
- Let the cake cool in the pan for 10 minutes before inverting it onto a wire rack to cool completely.
- Once cool, dust with powdered sugar or drizzle with a simple glaze (optional).
Notes
- Reducing the apple cider intensifies the flavor. Simmer 1/2 cup of cider in a small saucepan over medium heat until it reduces to about 1/4 cup. Let it cool before using.
- Make sure your butter is truly softened for best results.
- Do not overmix the batter.
