Description

Ingredients

  • 1 cup granulated sugar
  • 1 tablespoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup apple cider
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/4 cup turbinado sugar (for topping)
  • 1 teaspoon ground cinnamon (for topping)


Instructions

  1. Preheat your oven to 375°F (190°C). Grease or line a 12-cup muffin tin.
  2. In a large bowl, whisk together the flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate medium bowl, whisk together the apple cider, melted butter, eggs, and vanilla extract until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. In a small bowl, mix the turbinado sugar and the additional cinnamon for the topping.
  6. Spoon the batter evenly into the prepared muffin cups, filling each about two-thirds full.
  7. Sprinkle the turbinado sugar and cinnamon mixture generously over the top of each muffin.
  8. Bake for 18-22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  9. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For an extra burst of apple flavor, you can add 1/4 cup of finely diced apple to the batter.
