- 1 pound carrots, peeled and sliced
- 1 tablespoon olive oil
- 1/4 teaspoon salt
- 1/8 teaspoon black pepper
- 1/4 cup apple cider
- 1 tablespoon brown sugar
- 1 teaspoon fresh thyme leaves
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the sliced carrots with olive oil, salt, and pepper on a baking sheet.
- Roast for 10 minutes.
- While carrots are roasting, combine apple cider and brown sugar in a small saucepan. Heat over medium heat, stirring until sugar dissolves. Simmer for 2-3 minutes until slightly syrupy.
- Remove carrots from the oven. Drizzle the apple cider glaze over them and toss to coat.
- Sprinkle with fresh thyme leaves.
- Serve immediately.
Notes
- You can substitute maple syrup for brown sugar for a different sweetness.
