Ingredients

  • 1 tablespoon olive oil

  • 1 cup apple cider
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar, packed
  • 1 tablespoon Dijon mustard
  • 1 teaspoon dried thyme
  • 1 clove garlic, minced


Instructions

  1. Season the chicken pieces generously with salt and pepper.
  2. Heat the olive oil in a large skillet over medium-high heat.
  3. Add the chicken to the skillet and cook until nicely browned on both sides and cooked through, about 6-8 minutes per side depending on thickness. Remove chicken and set aside.
  4. In the same skillet, combine the apple cider, apple cider vinegar, brown sugar, Dijon mustard, thyme, and garlic.
  5. Bring the mixture to a boil, then reduce the heat to medium-low.
  6. Simmer, stirring occasionally, until the glaze thickens enough to coat the back of a spoon, about 10-12 minutes.
  7. Return the cooked chicken to the skillet. Spoon the glaze over the chicken pieces until they are well coated.
