- 2 lbs boneless, skinless chicken breasts or thighs
- 1 tablespoon olive oil
- Salt and pepper to taste
- 1 cup apple cider
- 1/4 cup apple cider vinegar
- 1/4 cup brown sugar, packed
- 1 tablespoon Dijon mustard
- 1 teaspoon dried thyme
- 1 clove garlic, minced
Instructions
- Season the chicken pieces generously with salt and pepper.
- Heat the olive oil in a large skillet over medium-high heat.
- Add the chicken to the skillet and cook until nicely browned on both sides and cooked through, about 6-8 minutes per side depending on thickness. Remove chicken and set aside.
- In the same skillet, combine the apple cider, apple cider vinegar, brown sugar, Dijon mustard, thyme, and garlic.
- Bring the mixture to a boil, then reduce the heat to medium-low.
- Simmer, stirring occasionally, until the glaze thickens enough to coat the back of a spoon, about 10-12 minutes.
- Return the cooked chicken to the skillet. Spoon the glaze over the chicken pieces until they are well coated.
- Cook for 1-2 minutes more to heat the chicken through and let the glaze set.
- Serve immediately with your favorite sides.

- For an extra fall flavor, add a small pinch of ground cinnamon or nutmeg to the glaze mixture.
- If you prefer a thicker glaze, you can whisk 1 teaspoon of cornstarch with 1 tablespoon of cold water and stir it into the simmering sauce during the last 2 minutes of cooking.
