Description

These Apple Cinnamon Streusel Muffins are like a warm hug on a crisp autumn day. They capture the comforting flavors of apple pie with a delightful crumbly topping, making them a perfect treat for any occasion.

Ingredients

Scale
  • For the Muffins:
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup milk
  • 1 cup finely chopped apples (about 1 medium apple)
  • For the Streusel Topping:
  • 1/2 cup all-purpose flour
  • 1/4 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 cup cold unsalted butter, cut into small pieces

Instructions

  1. Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease it well.
  2. In a medium bowl, whisk together the flour, baking soda, salt, cinnamon, nutmeg, and cloves. Set aside.
  3. In a large bowl, cream together the granulated sugar and softened butter until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the vanilla extract.
  5. In a small bowl, whisk together the milk.
  6. Add the dry ingredients to the wet ingredients alternately with the milk, beginning and ending with the dry ingredients. Mix until just combined, being careful not to overmix.
  7. Gently fold in the chopped apples.
  8. In a separate small bowl, prepare the streusel topping by combining the flour, brown sugar, granulated sugar, and cinnamon.
  9. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs.
  10. Divide the muffin batter evenly among the prepared muffin cups, filling each about two-thirds full.
  11. Sprinkle the streusel topping generously over the batter in each muffin cup.
  12. Bake for 18-22 minutes, or until a wooden skewer inserted into the center of a muffin comes out clean.
  13. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • For best results, use a firm apple variety like Honeycrisp, Gala, or Fuji.
  • Make sure your butter for the streusel is cold; this helps create a crumbly texture.
  • You can add a handful of chopped walnuts or pecans to the streusel for extra crunch.
  • These muffins are best enjoyed fresh, but can be stored in an airtight container at room temperature for up to 3 days.
