Description

Prepare this quick and crunchy Asian Cabbage Slaw using Napa cabbage and a simple sesame ginger dressing. It makes a great side dish or light main course.

Ingredients

Scale
  • 4 cups shredded Napa cabbage
  • 1 cup shredded red cabbage
  • 1/2 cup shredded carrots
  • 1/4 cup chopped green onions
  • 2 tablespoons sesame oil
  • 3 tablespoons rice vinegar
  • 2 tablespoons soy sauce or tamari
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1/4 teaspoon red pepper flakes (optional)
  • 2 tablespoons toasted sesame seeds for garnish

Instructions

  1. Combine the shredded Napa cabbage, red cabbage, carrots, and green onions in a large bowl.
  2. In a small bowl, whisk together the sesame oil, rice vinegar, soy sauce, honey, grated ginger, minced garlic, and red pepper flakes until well combined. This is your easy Asian slaw dressing.
  3. Pour the dressing over the cabbage mixture.
  4. Toss all ingredients together until the vegetables are evenly coated.
  5. Chill the slaw for at least 15 minutes before serving to allow the flavors to meld.
  6. Garnish with toasted sesame seeds before serving.

Notes

  • For a make ahead cabbage salad, prepare the dressing and vegetables separately. Combine them no more than 2 hours before serving to keep the slaw crisp.
  • Add 1 cup of shredded cooked chicken or cubed firm tofu for a Chicken Cabbage Slaw variation.
  • This recipe is naturally vegetarian and can be made vegan by using maple syrup instead of honey.
