Description
A refreshing cold noodle salad with an Asian-inspired sesame dressing.
Ingredients

- 8 ounces dried noodles (such as spaghetti or linguine)
- 1/4 cup soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 1 tablespoon honey or maple syrup (for vegan)
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1 cup shredded carrots
- 1 cup shredded red cabbage
- 1/2 cup chopped green onions
- 1/4 cup chopped fresh cilantro
- 2 tablespoons sesame seeds, toasted
Instructions
- Cook noodles according to package directions. Drain and rinse with cold water.
- In a large bowl, whisk together soy sauce, rice vinegar, sesame oil, honey or maple syrup, ginger, and garlic.
- Add the cooled noodles, carrots, cabbage, green onions, and cilantro to the bowl with the dressing.
- Toss gently to combine.
- Sprinkle with toasted sesame seeds before serving.
Notes
- You can add cooked chicken, shrimp, or tofu for added protein.
- Adjust the amount of ginger and garlic to your preference.
- This salad can be made ahead of time and stored in the refrigerator.
