Description

A refreshing cold noodle salad with an Asian-inspired sesame dressing.


Ingredients

Scale
  • 8 ounces dried noodles (such as spaghetti or linguine)
  • 1/4 cup soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon honey or maple syrup (for vegan)
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 cup shredded carrots
  • 1 cup shredded red cabbage
  • 1/2 cup chopped green onions
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons sesame seeds, toasted


Instructions

  1. Cook noodles according to package directions. Drain and rinse with cold water.
  2. In a large bowl, whisk together soy sauce, rice vinegar, sesame oil, honey or maple syrup, ginger, and garlic.
  3. Add the cooled noodles, carrots, cabbage, green onions, and cilantro to the bowl with the dressing.
  4. Toss gently to combine.
  5. Sprinkle with toasted sesame seeds before serving.

Notes

  • You can add cooked chicken, shrimp, or tofu for added protein.
  • Adjust the amount of ginger and garlic to your preference.
  • This salad can be made ahead of time and stored in the refrigerator.
