Description

Turn leftover mashed potatoes into delicious Bacon Cheddar Mashed Potato Puffs. These easy bites are perfect for snacks or appetizers, offering a delightful way to reinvent your favorite comfort food.

Ingredients

Scale
  • 2 cups leftover mashed potatoes
  • 1/2 cup shredded cheddar cheese
  • 4 slices bacon, cooked and crumbled
  • 1/4 cup all-purpose flour
  • 1 large egg, beaten
  • 1/4 cup breadcrumbs
  • Vegetable oil, for frying

Instructions

  1. In a medium bowl, combine the mashed potatoes, cheddar cheese, and crumbled bacon. Mix well.
  2. Stir in the flour and beaten egg until just combined.
  3. Shape the mixture into small balls, about 1 inch in diameter.
  4. Roll each ball in breadcrumbs, coating evenly.
  5. Heat about 2 inches of vegetable oil in a heavy-bottomed pot or deep skillet over medium-high heat to 350°F (175°C).
  6. Carefully fry the potato puffs in batches, without overcrowding the pot, for 3-4 minutes, or until golden brown and heated through.
  7. Remove the puffs with a slotted spoon and drain on paper towels.
  8. Serve warm.

Notes

  • Ensure your mashed potatoes are cold for easier handling.
  • You can add a pinch of garlic powder or onion powder to the mixture for extra flavor.
  • Adjust the amount of cheese and bacon to your preference.
  • These puffs can be baked at 375°F (190°C) for 20-25 minutes, flipping halfway, for a lighter option.
