- 1 cup shredded cheddar cheese
- 1/2 cup breadcrumbs
Instructions
- Preheat your oven to 375°F (190°C).
- Cook the chopped bacon in a skillet until crispy. Remove bacon with a slotted spoon and set aside, leaving the bacon grease in the skillet.
- Add the chopped onion to the bacon grease and sauté until softened, about 5 minutes.
- In a separate bowl, whisk together the flour, milk, salt, and pepper until smooth.
- Pour the milk mixture into the skillet with the onions. Cook over medium heat, stirring constantly, until the sauce thickens.
- Stir in the shredded cheddar cheese until melted and combined.
- Add the sliced yellow squash and most of the crispy bacon to the sauce. Stir gently to coat.
- Pour the mixture into a greased 9×13 inch baking dish.
- In a small bowl, combine the breadcrumbs with the remaining crispy bacon. Sprinkle this mixture evenly over the casserole.
