Ingredients

  • 1 (5 ounce) can tuna, drained
  • 1/4 cup mayonnaise
  • 2 tablespoons finely chopped celery
  • 1 tablespoon finely chopped red onion
  • 1 teaspoon Dijon mustard
  • Salt and black pepper to taste
  • 4 slices bread (sourdough or whole wheat recommended)
  • 4 slices cooked bacon, crumbled
  • 2 slices cheddar cheese or preferred cheese
  • 2 tablespoons unsalted butter, softened


Instructions

  1. In a medium bowl, combine the drained tuna, mayonnaise, celery, red onion, and Dijon mustard. Mix well until all ingredients are incorporated. Season with salt and black pepper to taste.
  2. Lay out the bread slices on a clean surface. Spread butter on one side of each slice.
  3. Flip two slices of bread so the unbuttered side is facing up. Divide the tuna mixture evenly between these two slices.
  4. Sprinkle the crumbled bacon over the tuna mixture on both slices.
  5. Top each with a slice of cheese.
  6. Place the remaining two slices of bread, buttered side up, on top of the cheese, completing the sandwiches.
  7. Heat a large skillet or griddle over medium heat. Carefully place the sandwiches in the hot skillet, buttered side down.
  8. Cook for 3-5 minutes per side, or until the bread is golden brown and the cheese is melted and bubbly.
  9. Remove from the skillet, slice in half if desired, and serve immediately.
