Instructions
- Reduce the apple cider: Pour apple cider into a small saucepan. Bring to a boil over medium-high heat. Reduce heat to medium-low and simmer until the cider has reduced to about 1/4 cup. This will take about 15-20 minutes. Set aside to cool.
- Preheat oven and prepare donut pans: Preheat your oven to 350°F (175°C). Grease and flour two 6-cavity donut pans.
- Combine dry ingredients: In a large bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves.
- Combine wet ingredients: In a separate medium bowl, whisk together melted butter, granulated sugar, and brown sugar until combined. Whisk in the egg until well incorporated. Stir in the milk, vanilla extract, and the cooled reduced apple cider.
- Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients. Stir just until combined and no streaks of flour remain. Do not overmix.
- Fill donut pans: Spoon the batter into the prepared donut pans, filling each cavity about two-thirds full. You can also pipe the batter using a piping bag or a ziptop bag with the corner snipped off for neater donuts.
- Bake: Bake for 10-12 minutes, or until the donuts are golden brown and spring back when lightly touched.
- Cool: Let the donuts cool in the pans for 5 minutes before transferring them to a wire rack to cool completely.
