- 2 boneless, skinless chicken breasts
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 cup Italian-seasoned breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 1 cup marinara sauce
- 1 cup shredded mozzarella cheese
- Fresh basil for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C).
- Slice chicken breasts horizontally to create thinner cutlets.
- Set up three shallow dishes: one with flour, one with beaten eggs, and one with breadcrumbs, Parmesan cheese, garlic powder, salt, and pepper mixed together.
- Dredge each chicken cutlet in flour, then dip in egg, and finally coat with the breadcrumb mixture.
- Drizzle olive oil onto a baking sheet lined with parchment paper. Place the coated chicken cutlets on the baking sheet.
- Bake for 15 minutes.
- Flip the chicken cutlets and top each with marinara sauce and mozzarella cheese.
- Bake for another 10-15 minutes, or until the chicken is cooked through and the cheese is melted and bubbly.
- Garnish with fresh basil if desired.
Notes
- For extra crispiness, you can lightly toast the breadcrumbs before coating the chicken.
- Feel free to add your favorite Italian herbs to the breadcrumb mixture.
- Serve with your favorite pasta or a fresh side salad.
