  • 400g cherry or grape tomatoes
  • 225g block of feta cheese
  • 60ml olive oil, plus extra for drizzling
  • 3 cloves garlic, minced
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 400g pasta (like penne or fusilli)
  • Fresh basil, chopped, for garnish


Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Place the tomatoes in a 9×13 inch baking dish.
  3. Place the block of feta cheese in the center of the tomatoes.
  4. Drizzle the olive oil over the tomatoes and feta.
  5. Sprinkle the minced garlic, oregano, and red pepper flakes (if using) over everything. Season with salt and pepper.
  6. Bake for 30 to 35 minutes until the tomatoes are burst and the feta is soft and lightly browned.
  7. While the cheese bakes, cook your pasta according to package directions until al dente. Reserve about 1/2 cup of the pasta water before draining.
  8. Remove the baking dish from the oven. Mash the softened feta and burst tomatoes with a fork, stirring to create a creamy sauce consistency. Add small amounts of the reserved pasta water if the sauce seems too thick.
  9. Add the drained pasta directly to the baking dish. Toss well until the pasta is fully coated in the creamy feta and tomato sauce.
  10. Serve immediately, garnished with fresh basil.

Notes

  • Use good quality feta for the best flavor payoff.
  • Adjust the red pepper flakes to control the heat level.
  • You can add a splash of heavy cream at the end if you prefer a richer sauce.
