- 4 Bone-in, skin-on chicken thighs
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 cloves garlic, minced
Instructions
- Preheat your oven to 400°F (200°C).
- Pat the chicken thighs very dry with paper towels. This helps the skin crisp up.
- In a small bowl, mix together the oregano, thyme, garlic powder, onion powder, salt, and pepper. This is your herb rub.
- Rub the olive oil all over the chicken thighs.
- Sprinkle the herb rub evenly over all surfaces of the chicken. Rub the minced garlic onto the skin.
- Place the chicken thighs skin-side up in a baking dish.
- Bake for 35 to 45 minutes, or until the internal temperature reaches 165°F (74°C) and the skin is golden brown and crispy.
- Let the chicken rest for 5 minutes before serving.
Notes
- For extra crispy skin, you can briefly broil the chicken for the last 2-3 minutes, watching closely to prevent burning.
- Use fresh garlic if you have it; it adds a better flavor punch.
