- 1 1/2 cups cooked elbow macaroni
- 1 tablespoon butter, melted
- 1/4 cup milk
- 1/2 cup shredded sharp cheddar cheese
- 1/4 cup shredded Gruyere or Monterey Jack cheese
- 1/4 teaspoon salt
- Pinch of black pepper
- 1 large egg, lightly beaten
- 1/2 cup panko breadcrumbs
- Cooking spray
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a mini muffin tin with cooking spray.
- In a medium bowl, combine the cooked macaroni, melted butter, milk, cheddar cheese, Gruyere cheese, salt, and pepper. Mix well until the cheese starts to melt and coat the pasta.
- Stir in the lightly beaten egg until everything is just combined.
- Spoon the macaroni mixture evenly into the prepared mini muffin cups, pressing down gently.
- Sprinkle the tops of the bites with panko breadcrumbs.
- Bake for 12 to 15 minutes, or until the edges are golden brown and the tops are crispy.
- Let the bites cool in the tin for 5 minutes before carefully removing them with a small offset spatula or butter knife. Serve warm.
Notes
- You can use any combination of good melting cheeses you prefer for this recipe.
- For extra flavor, add a dash of Dijon mustard to the cheese mixture.
