Description

  • 2 tablespoons sun-dried tomatoes in oil, drained and chopped
  • 1 teaspoon dried Italian seasoning
  • 1/4 cup fresh spinach, chopped
  • 1 tablespoon fresh parsley, chopped for garnish


Instructions

  1. Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius). Lightly grease a baking dish or line it with parchment paper.
  2. Pat the salmon fillets dry with paper towels. Rub them with olive oil and season generously with salt and pepper. Place the salmon in the prepared baking dish.
  3. In a small bowl, whisk together the heavy cream, chicken broth, minced garlic, Parmesan cheese, sun-dried tomatoes, and Italian seasoning until combined.
  4. Pour the cream mixture evenly over and around the salmon fillets in the baking dish.
  5. Bake for 12 to 15 minutes, or until the salmon is cooked through and flakes easily with a fork. Cooking time depends on the thickness of your fillets.
  6. Remove the dish from the oven. Sprinkle the chopped fresh spinach over the sauce. The residual heat will wilt the spinach slightly.
  7. Garnish with fresh parsley before serving.
