- 1 large egg

- 1/2 cup all-purpose flour

Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a baking sheet or line it with parchment paper. Spray the paper lightly with cooking spray.
- Wash the zucchini and trim the ends. Slice the zucchini into rounds about 1/4 inch thick. You can also cut them into sticks if you prefer.
- Set up a dredging station with three shallow bowls. In the first bowl, whisk the egg and water together.
- In the second bowl, mix the flour, salt, and pepper.
- In the third bowl, combine the grated Parmesan cheese, garlic powder, and Italian seasoning.
- Dip each zucchini slice first into the flour mixture, shaking off any excess.
- Next, dip the floured zucchini into the egg wash, letting any excess drip off.
- Finally, press the zucchini firmly into the Parmesan mixture to coat both sides well.
- Arrange the coated zucchini in a single layer on the prepared baking sheet. Do not let the pieces overlap.
- Lightly spray the tops of the zucchini with cooking spray to help the cheese brown.
- Bake for 12 to 15 minutes, flipping the pieces halfway through, until the zucchini is tender and the Parmesan crust is golden brown and crispy.
- Serve immediately as a healthy appetizer or easy Parmesan side dish.
Notes
- For extra crispiness, you can use Panko breadcrumbs mixed with the Parmesan cheese.
- If you want a low-carb zucchini side, substitute the flour with almond flour.
- To make this a keto friendly zucchini option, skip the flour entirely and use only the egg wash and the Parmesan coating.
