- 2 pounds fresh beets, trimmed and scrubbed
- 2 tablespoons olive oil
- 1/4 cup balsamic vinegar
- 2 tablespoons honey or maple syrup
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions
- Preheat your oven to 400 degrees F (200 degrees C).
- Wrap the whole, scrubbed beets tightly in aluminum foil packets.
- Place the foil packets on a baking sheet.
- Roast for 45 to 60 minutes, or until the beets are tender when pierced with a fork.
- While the beets roast, whisk together the balsamic vinegar, honey or maple syrup, salt, and pepper in a small bowl. This is your glaze.
- Carefully remove the beets from the oven and let them cool slightly until you can handle them.
- Peel the beets. The skins should slip off easily. Cut the peeled beets into bite-sized wedges or cubes.
- Place the cut beets in a bowl. Drizzle the balsamic glaze over the beets.
- Gently toss to coat all the pieces evenly.
- Serve immediately as a warm side dish.
Notes
- If you are short on time, you can use pre-cooked beets, but adjust the heating time accordingly.
- For an extra layer of flavor, add a sprig of fresh rosemary or thyme to the foil packet before roasting.
- You can substitute brown sugar for the honey or maple syrup in the glaze if you prefer.
- This dish is wonderful served at room temperature as well.
