Description

Ingredients

  • 2 pounds fresh beets, trimmed and scrubbed
  • 2 tablespoons olive oil
  • 1/4 cup balsamic vinegar
  • 2 tablespoons honey or maple syrup
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper


Instructions

  1. Preheat your oven to 400 degrees F (200 degrees C).
  2. Wrap the whole, scrubbed beets tightly in aluminum foil packets.
  3. Place the foil packets on a baking sheet.
  4. Roast for 45 to 60 minutes, or until the beets are tender when pierced with a fork.
  5. While the beets roast, whisk together the balsamic vinegar, honey or maple syrup, salt, and pepper in a small bowl. This is your glaze.
  6. Carefully remove the beets from the oven and let them cool slightly until you can handle them.
  7. Peel the beets. The skins should slip off easily. Cut the peeled beets into bite-sized wedges or cubes.
  8. Place the cut beets in a bowl. Drizzle the balsamic glaze over the beets.
  9. Gently toss to coat all the pieces evenly.
  10. Serve immediately as a warm side dish.

Notes

  • If you are short on time, you can use pre-cooked beets, but adjust the heating time accordingly.
  • For an extra layer of flavor, add a sprig of fresh rosemary or thyme to the foil packet before roasting.
  • You can substitute brown sugar for the honey or maple syrup in the glaze if you prefer.
  • This dish is wonderful served at room temperature as well.
