Description

A recipe for dense, fudgy brownies infused with the moist texture and flavor of ripe banana bread.


Ingredients

  • 1 cup (200g) granulated sugar
  • 3/4 cup (150g) packed light brown sugar
  • 2 large eggs, room temperature
  • 1 teaspoon vanilla extract
  • 1 cup (240g) mashed very ripe bananas (about 2-3 medium bananas)
  • 3/4 cup (90g) all-purpose flour
  • 1/2 cup (45g) unsweetened cocoa powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/2 cup (85g) semi-sweet chocolate chips, plus more for topping


Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch metal baking pan with parchment paper, leaving an overhang on two sides for easy removal. Lightly grease the paper.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until combined.
  3. Whisk in the eggs one at a time until fully incorporated. Stir in the vanilla extract and the mashed bananas until the mixture is smooth.
  4. In a separate medium bowl, whisk together the flour, cocoa powder, salt, and baking powder.
  5. Gradually add the dry ingredients to the wet ingredients, mixing only until just combined. Do not overmix.
  6. Fold in the 1/2 cup of chocolate chips.
  7. Spread the batter evenly into the prepared baking pan. Sprinkle extra chocolate chips over the top, if desired.
  8. Bake for 30 to 35 minutes. A toothpick inserted near the center should come out with moist, fudgy crumbs attached, not wet batter.
  9. Let the brownies cool completely in the pan on a wire rack before lifting them out using the parchment paper overhang. Cut into squares.

Notes

  • Use bananas that are heavily spotted or almost black for the best banana flavor and moisture.
  • For an extra fudgy texture, slightly underbake by 2-3 minutes.
  • You can add 1/2 cup of chopped walnuts or pecans with the chocolate chips for added crunch.
