Description

A simple, high-protein bean salad using pantry staples with a bright, zesty vinaigrette, perfect for meal prep or picnics.


Ingredients

  • 1 (15 ounce) can kidney beans, drained and rinsed
  • 1 (15 ounce) can garbanzo beans (chickpeas), drained and rinsed
  • 1/2 cup chopped red onion
  • 1/2 cup chopped celery
  • 1/4 cup olive oil
  • 3 tablespoons white wine vinegar
  • 1 tablespoon Dijon mustard
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper


Instructions

  1. Combine the drained green beans, kidney beans, and garbanzo beans in a large bowl.
  2. Add the chopped red onion and celery to the beans.
  3. In a separate small bowl, whisk together the olive oil, white wine vinegar, Dijon mustard, sugar, salt, and pepper until well combined to make the dressing.
  4. Pour the dressing over the bean mixture.
  5. Stir gently until all the vegetables and beans are evenly coated with the dressing.
  6. Cover the bowl and refrigerate for at least 1 hour before serving to allow the flavors to meld.
