- 2 tablespoons oyster sauce
- 1 tablespoon brown sugar

- 2 tablespoons vegetable oil (for stir-frying)
Instructions
- In a bowl, combine the thinly sliced flank steak with 1 tablespoon soy sauce and 1 tablespoon cornstarch. Toss to coat the beef evenly. Let it marinate for at least 15 minutes.
- While the beef marinates, prepare the broccoli. You can steam it lightly for 2-3 minutes until it turns bright green and is slightly tender-crisp, or you can add it directly to the stir-fry later.
- In a small bowl, whisk together 1/4 cup soy sauce, oyster sauce, brown sugar, sesame oil, and water. This is your stir-fry sauce. Set aside.
- Heat 2 tablespoons of vegetable oil in a large skillet or wok over high heat until shimmering.
- Add the marinated beef to the hot skillet in a single layer. Cook for 1-2 minutes per side until browned. Do not overcrowd the pan; cook in batches if necessary. Remove the beef from the skillet and set aside.
- Add the minced garlic and grated ginger to the skillet. Stir-fry for about 30 seconds until fragrant.
- Add the prepared broccoli florets to the skillet. If you didn’t pre-steam it, add about 2 tablespoons of water and cover for 1-2 minutes to steam slightly.
- Pour the prepared stir-fry sauce into the skillet. Bring to a simmer.
- In a small cup, mix the remaining 1 tablespoon of cornstarch with 2 tablespoons of water to create a slurry. Pour this slurry into the simmering sauce, stirring constantly until the sauce thickens.
- Return the browned beef to the skillet. Toss everything together to coat the beef and broccoli in the thickened sauce.
- Cook for another minute until the beef is heated through and the broccoli is tender-crisp.
- Serve immediately over rice.

- For extra tender beef, you can add a teaspoon of baking soda to the marinade.
