Description

Make homemade apple fritters that are crispy on the outside and tender inside, finished with a simple cinnamon glaze.

Ingredients

Scale
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 cup granulated sugar
  • 2 large eggs, lightly beaten
  • 1/2 cup milk
  • 1 teaspoon vanilla extract
  • 2 medium apples (like Granny Smith or Honeycrisp), peeled, cored, and diced small
  • Vegetable oil, for deep frying

Instructions

  1. In a large bowl, whisk together the flour, baking powder, salt, cinnamon, and granulated sugar.
  2. In a separate bowl, whisk the eggs, milk, and vanilla extract.
  3. Pour the wet ingredients into the dry ingredients. Mix until just combined; do not overmix the batter.
  4. Gently fold in the diced apples.
  5. Heat about 2 inches of vegetable oil in a deep, heavy-bottomed pot or Dutch oven to 360°F (182°C). Use a thermometer to monitor the temperature.
  6. Carefully drop spoonfuls of the batter (about 2 tablespoons each) into the hot oil, working in batches to avoid crowding the pot.
  7. Fry for 2 to 3 minutes per side, until golden brown and cooked through.
  8. Remove the fritters with a slotted spoon and place them on a wire rack lined with paper towels to drain excess oil.
  9. While the fritters are cooling slightly, prepare the glaze.
  10. For the glaze: Whisk together 1 cup powdered sugar, 2 tablespoons milk, 1/2 teaspoon vanilla extract, and 1/4 teaspoon cinnamon until smooth. Add more milk, one teaspoon at a time, to reach a drizzling consistency.
  11. Dip or drizzle the warm fritters generously with the cinnamon glaze. Serve warm.

Notes

  • For the best texture, do not overmix the batter; a few lumps are acceptable.
  • Use firm, tart apples for the best flavor contrast against the sweet dough and glaze.
  • If you do not have a candy thermometer, test the oil by dropping a small piece of batter in; it should sizzle immediately and float to the top within 30 seconds.
