- ½ cup (1 stick) cold unsalted butter, cut into cubes
- 4-6 tablespoons ice water
- 3 cups fresh blackberries
- ¼ cup granulated sugar

- 1 teaspoon lemon zest
- 1 tablespoon lemon juice
- 1 egg, beaten (for egg wash)
- 1 tablespoon turbinado sugar (for sprinkling)
Instructions
- In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces of butter.
- Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Be careful not to overmix.
- Gather the dough into a ball, flatten it into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
- In another bowl, gently toss the blackberries with granulated sugar, cornstarch, lemon zest, and lemon juice.
- On a lightly floured surface, roll out the chilled dough into a rough 12-inch circle.
- Carefully transfer the dough to a baking sheet lined with parchment paper.
- Spoon the blackberry filling into the center of the dough, leaving a 2-inch border.
- Fold the dough border up and over the edges of the filling, pleating as you go to create a rustic crust.
- Brush the folded crust with the beaten egg and sprinkle with turbinado sugar.
- Bake in a preheated oven at 375°F (190°C) for 35-45 minutes, or until the crust is golden brown and the filling is bubbly.
- Let the galette cool on the baking sheet for at least 15 minutes before slicing and serving.
Notes
- For an extra flaky crust, ensure your butter and water are very cold.
- If you don’t have fresh blackberries, frozen ones can be used, but they may release more liquid.
- Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat.
