Description

Ingredients

  • ½ teaspoon salt
  • ½ cup (1 stick) cold unsalted butter, cut into cubes
  • 4-6 tablespoons ice water
  • 3 cups fresh blackberries
  • ¼ cup granulated sugar
  • 2 tablespoons cornstarch
  • 1 teaspoon lemon zest
  • 1 tablespoon lemon juice
  • 1 egg, beaten (for egg wash)
  • 1 tablespoon turbinado sugar (for sprinkling)


Instructions

  1. In a large bowl, whisk together the flour and salt. Cut in the cold butter using a pastry blender or your fingertips until the mixture resembles coarse crumbs with some pea-sized pieces of butter.
  2. Gradually add ice water, one tablespoon at a time, mixing until the dough just comes together. Be careful not to overmix.
  3. Gather the dough into a ball, flatten it into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.
  4. In another bowl, gently toss the blackberries with granulated sugar, cornstarch, lemon zest, and lemon juice.
  5. On a lightly floured surface, roll out the chilled dough into a rough 12-inch circle.
  6. Carefully transfer the dough to a baking sheet lined with parchment paper.
  7. Spoon the blackberry filling into the center of the dough, leaving a 2-inch border.
  8. Fold the dough border up and over the edges of the filling, pleating as you go to create a rustic crust.
  9. Brush the folded crust with the beaten egg and sprinkle with turbinado sugar.
  10. Bake in a preheated oven at 375°F (190°C) for 35-45 minutes, or until the crust is golden brown and the filling is bubbly.
  11. Let the galette cool on the baking sheet for at least 15 minutes before slicing and serving.

Notes

  • For an extra flaky crust, ensure your butter and water are very cold.
  • If you don’t have fresh blackberries, frozen ones can be used, but they may release more liquid.
  • Serve warm with a scoop of vanilla ice cream or a dollop of whipped cream for an extra treat.
