Description

This recipe shows you how to cook thick-cut cabbage steaks using high heat to achieve a satisfying blistered exterior and tender interior, topped with salty feta cheese.

Ingredients

Scale
  • 1 large head green cabbage
  • 3 tablespoons olive oil
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 cup crumbled feta cheese
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit (220 degrees Celsius). Line a baking sheet with parchment paper.
  2. Remove any loose outer leaves from the cabbage. Cut the cabbage head vertically into four equal, thick ‘steaks,’ keeping the core intact to hold the layers together.
  3. Brush both sides of each cabbage steak generously with olive oil. Sprinkle evenly with salt and pepper.
  4. Place the seasoned cabbage steaks on the prepared baking sheet.
  5. Roast for 20 minutes. Flip the steaks carefully.
  6. Continue roasting for another 15 to 20 minutes, or until the edges are deeply browned and blistered, and the center is tender when pierced with a fork.
  7. Remove the steaks from the oven. Arrange them on serving plates.
  8. Squeeze fresh lemon juice over the hot cabbage.
  9. Sprinkle the crumbled feta cheese and chopped fresh parsley over the top of each steak before serving.

Notes

  • To ensure the steaks hold together, cut them through the core. If your cabbage is very large, you may need to reduce the cooking time slightly.
  • For extra char, you can finish the steaks under the broiler for 1 to 2 minutes after roasting, watching closely to prevent burning.
  • If you prefer a pan-seared method, sear the steaks in a hot, oiled cast-iron skillet over medium-high heat for 5 to 7 minutes per side before finishing them in the oven.
