Description

This BLT Pasta Salad brings together the classic flavors of a BLT sandwich in a cool, satisfying pasta salad. It’s easy to make and perfect for picnics, potlucks, or a simple weeknight meal.


Ingredients

  • 1 pound cooked pasta (such as rotini, penne, or elbow macaroni)
  • 1 pound bacon, cooked and crumbled
  • 2 cups chopped cherry tomatoes
  • 1 cup chopped lettuce (iceberg or romaine works well)
  • 1/2 cup mayonnaise
  • 1/4 cup milk
  • 2 tablespoons red wine vinegar
  • 1 teaspoon sugar
  • Salt and black pepper to taste


Instructions

  1. Cook pasta according to package directions, then drain and rinse with cold water.
  2. In a large bowl, combine the cooked and cooled pasta, crumbled bacon, chopped tomatoes, and chopped lettuce.
  3. In a separate small bowl, whisk together the mayonnaise, milk, red wine vinegar, and sugar until smooth.
  4. Pour the dressing over the pasta mixture and toss gently to coat everything evenly.
  5. Season with salt and black pepper to taste.
  6. Cover and refrigerate for at least 30 minutes before serving to allow the flavors to meld.
