- 1/2 cup cottage cheese (small curd preferred)

- 1 large egg
- 1/4 cup milk (dairy or non-dairy)
- 1/4 cup melted coconut oil or vegetable oil
- 1 teaspoon vanilla extract
- 1 cup fresh or frozen blueberries
Instructions
- Preheat your oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease well.
- In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside.
- In a separate large bowl, combine the cottage cheese, maple syrup, egg, milk, oil, and vanilla extract. Mix until mostly smooth. You can use an immersion blender for a smoother texture if desired.
- Add the dry ingredients to the wet ingredients. Mix gently until just combined. Do not overmix; a few lumps are fine.
- Gently fold in the blueberries. If using frozen blueberries, do not thaw them first.
- Divide the batter evenly among the 12 muffin cups, filling each about two-thirds full.
- Bake for 18 to 22 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely.
Notes
- For extra protein, you can substitute half the flour with oat flour.
- If you prefer a less dense texture, blend the cottage cheese until completely smooth before mixing with other wet ingredients.
- Toss the blueberries lightly in one teaspoon of flour before folding them in; this helps prevent them from sinking to the bottom of the muffins.
