Description

A simple and flavorful Texas Caviar recipe, perfect for snacking, especially on a boat.


Ingredients

  • 1 (15 ounce) can black-eyed peas, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (15 ounce) can whole kernel corn, drained
  • 1 cup chopped red onion
  • 1 cup chopped green bell pepper
  • 1 cup chopped red bell pepper
  • ½ cup chopped fresh cilantro
  • ½ cup olive oil
  • ¼ cup red wine vinegar
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ teaspoon ground cumin


Instructions

  1. In a large bowl, combine black-eyed peas, black beans, corn, red onion, green bell pepper, red bell pepper, and cilantro.
  2. In a small bowl, whisk together olive oil, red wine vinegar, salt, pepper, and cumin.
  3. Pour the dressing over the bean mixture and stir to combine.
  4. Cover and refrigerate for at least 30 minutes before serving. For best flavor, chill for a few hours or overnight.
  5. Serve with tortilla chips or as a side dish.
