Scale
- 2 ripe bananas, mashed
- 1 cup natural peanut butter
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 cup maple syrup or honey (adjust for sweetness)
- 1 1/2 cups rolled oats (old-fashioned)
- 1/2 cup whole wheat flour or oat flour
- 1 teaspoon baking soda
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/2 cup mix-ins (e.g., chocolate chips, flax seeds, or chopped nuts)
Instructions
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a large bowl, combine the mashed bananas, peanut butter, egg, and vanilla extract. Mix until smooth.
- Stir in the maple syrup or honey until fully incorporated.
- In a separate bowl, whisk together the rolled oats, flour, baking soda, cinnamon, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Do not overmix.
- Fold in your chosen mix-ins, like chocolate chips or seeds.
- Drop rounded tablespoons of dough onto the prepared baking sheet, leaving space between each cookie. Gently flatten them slightly with the back of a spoon.
- Bake for 12 to 15 minutes, or until the edges are lightly golden brown.
- Let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely. These are great for meal prep breakfast ideas.
Notes
- For a gluten-free breakfast cookie, use certified gluten-free rolled oats and oat flour.
- These cookies freeze well; store them in an airtight container for up to three months.
- If you prefer a less sweet cookie, reduce the maple syrup to 1/3 cup. This makes them a good low sugar cookie option.
- These are excellent for grab and go breakfast situations when you need quick morning meals.
