Description

A guide to assembling an appealing and manageable breakfast grazing board featuring sweet, savory, and healthy components perfect for weekend brunch or special family mornings.

Ingredients

Scale
  • 1 cup Greek yogurt
  • 1/4 cup honey
  • 1 teaspoon vanilla extract
  • 1 cup mixed fresh berries (strawberries, blueberries)
  • 1/2 cup sliced kiwi
  • 1 package mini whole-wheat bagels or sliced baguette
  • 4 hard-boiled eggs, halved
  • 4 slices smoked salmon
  • 1/2 cup cream cheese, softened
  • 2 tablespoons chopped chives
  • 1/4 cup toasted almonds or walnuts
  • 1/2 cup mini whole-grain pancakes or waffles (pre-made or frozen)
  • 2 tablespoons maple syrup
  • 4 small containers of jam or preserves

Instructions

  1. Prepare the yogurt dip: Mix Greek yogurt, honey, and vanilla extract in a small bowl. Cover and chill until ready to use.
  2. Prepare the savory spread: Mix cream cheese and chopped chives. Cover and chill.
  3. Cook or warm the pancakes/waffles according to package directions.
  4. Slice the bagels or baguette. If using pre-made pancakes, ensure they are ready to serve.
  5. Arrange the board: Start by placing small bowls or ramekins for wet items like the yogurt dip, cream cheese spread, and jams.
  6. Place larger items next. Arrange the sliced bagels/bread, hard-boiled eggs, and smoked salmon around the bowls.
  7. Fill in the gaps with fresh fruit (berries, kiwi) and nuts.
  8. Place the warm pancakes/waffles on the board, perhaps drizzled lightly with maple syrup or served with syrup on the side.
  9. Place small serving utensils on the board for easy access.
  10. Serve immediately or cover tightly and refrigerate for up to 4 hours if prepping ahead.

Notes

  • To save time, boil eggs and mix dips the day before.
  • Use seasonal fruit for the best flavor and color contrast.
  • For a kid-friendly section, separate out plain fruit and small pieces of cheese.
  • If you need a make-ahead baked item, prepare mini muffins the day prior.
