Description
Follow these steps to make tender, oven-roasted carrots coated in a sweet, glossy glaze made from brown sugar, butter, cinnamon, and thyme.
Ingredients
Scale
- 2 lbs carrots, peeled and sliced into 1-inch pieces
- 4 tablespoons unsalted butter, cut into pieces
- 1/2 cup packed light brown sugar
- 1/4 cup water
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon fresh thyme leaves
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a large baking dish.
- Place the prepared carrots in the baking dish.
- In a small saucepan over medium heat, combine the butter, brown sugar, and water. Stir constantly until the butter melts and the sugar dissolves, creating a smooth syrup. This takes about 3 minutes.
- Remove the syrup from the heat. Stir in the cinnamon, salt, and pepper.
- Pour the brown sugar mixture evenly over the carrots. Toss gently to coat all the pieces.
- Sprinkle the fresh thyme leaves over the carrots.
- Roast for 30 to 35 minutes, stirring halfway through the cooking time. The carrots should be tender when pierced with a fork, and the glaze should be thick and bubbly.
- Serve immediately as a side dish.
Notes
- For a quicker stovetop version, cook the carrots until tender-crisp, then add the glaze ingredients and simmer until the sauce reduces and coats the carrots.
- If you prefer a tangier glaze, add 1 teaspoon of apple cider vinegar to the syrup mixture before pouring it over the carrots.
- Use rainbow carrots for visual appeal if you have them available.
