Description
Make this Bruschetta Chicken Bake for a comforting meal full of tomato and basil flavors. It is simple to layer and results in perfectly melted cheese every time.
Ingredients
Scale
- 1.5 lbs boneless, skinless chicken breasts
- 1 cup bruschetta topping (jarred or fresh)
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 4 slices of bread (for topping base)
- 2 tablespoons olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C). Lightly grease a baking dish.
- Season the chicken breasts with salt and pepper. Place them in the prepared baking dish.
- Drizzle the chicken with olive oil.
- Spoon the bruschetta topping evenly over each chicken breast.
- Top the bruschetta with the mozzarella cheese, followed by the Parmesan cheese.
- Bake for 20-25 minutes, or until the chicken is fully cooked (internal temperature reaches 165°F or 74°C) and the cheese is bubbly and golden brown.
- While the chicken bakes, lightly toast the slices of bread.
- Serve the chicken immediately over the toasted bread slices, if desired, for an extra hearty meal.
Notes
- For an extra layer of flavor, you can lightly sauté the chicken for 3 minutes per side before adding the topping.
- If your bruschetta topping is very watery, drain some of the excess liquid before spooning it onto the chicken.
- To get the cheese perfectly melted and browned, switch your oven to broil for the last 1-2 minutes, watching closely to prevent burning.
