Description

- 1.5 lb Brussels sprouts, trimmed and halved
- 4 slices thick-cut bacon, chopped
- 2 tablespoons olive oil
- 1/4 cup pure maple syrup
- 1 tablespoon apple cider vinegar
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat your oven to 400 degrees Fahrenheit (200 degrees Celsius).
- Toss the halved Brussels sprouts with olive oil, salt, and pepper on a large baking sheet.
- Roast for 15 minutes.
- While the sprouts roast, cook the chopped bacon in a small skillet over medium heat until crisp. Remove the bacon with a slotted spoon and set aside on a paper towel-lined plate, reserving 1 tablespoon of the bacon grease.
- In the same skillet with the reserved bacon grease, whisk together the maple syrup and apple cider vinegar. Heat gently until the mixture bubbles slightly, about 1 minute. Remove from heat.
- Remove the sprouts from the oven. Drizzle the maple mixture over the sprouts and toss to coat.
- Return the sprouts to the oven and roast for another 10 to 15 minutes, or until the sprouts are tender and caramelized.
- Transfer the glazed sprouts to a serving dish. Sprinkle the reserved crispy bacon over the top before serving.
Notes
- For extra crispiness, you can briefly place the sprouts under the broiler for the last 2 minutes, watching closely to prevent burning.
- If you prefer a thicker glaze, simmer the maple syrup and vinegar mixture for an extra minute or two until it reduces slightly before tossing with the sprouts.
