Description

Enjoy these crispy Buffalo Cauliflower Bites, a fantastic, healthier snack perfect for game day gatherings. We focus on getting that perfect crunch and pairing it with a simple, zesty dipping sauce.

Ingredients

Scale
  • 1 large head of cauliflower, cut into bite-sized florets
  • 1 cup all-purpose flour
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup cold water (or club soda for extra crispness)
  • 1/2 cup hot sauce (your favorite buffalo style)
  • 2 tablespoons melted butter (or vegan butter substitute)
  • For Dipping Sauce: 1/2 cup plain Greek yogurt, 1 tablespoon lemon juice, 1 teaspoon dried dill

Instructions

  1. Preheat your oven to 425°F (220°C). Line two large baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, salt, pepper, and garlic powder.
  3. Slowly whisk in the cold water or club soda until you have a smooth batter, similar to pancake batter. Do not overmix.
  4. Dip each cauliflower floret into the batter, letting excess drip off, and place them on the prepared baking sheets. Keep space between the florets.
  5. Bake for 20-25 minutes, flipping halfway through, until the batter is set and lightly golden.
  6. While baking, prepare the sauce by mixing the yogurt, lemon juice, and dill in a small bowl. Set aside.
  7. In a separate small bowl, combine the hot sauce and melted butter.
  8. Remove the partially cooked cauliflower from the oven. Gently toss the hot, baked florets in the buffalo sauce mixture until evenly coated.
  9. Return the sauced bites to the baking sheets. Bake for another 10-12 minutes until they are crispy and the sauce has caramelized slightly.
  10. Serve immediately with your cool dipping sauce.

Notes

  • For extra crispiness, chill the battered cauliflower on the baking sheet for 15 minutes before the first bake.
  • Use club soda instead of water in the batter; the carbonation helps create a lighter crust.
  • Adjust the amount of hot sauce to control the spice level for your guests.
  • These are best eaten right out of the oven for maximum crunch.
