  • 1 large head cauliflower, cut into bite-sized florets
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup milk
  • 1/2 cup buffalo wing hot sauce
  • 1/4 cup melted butter
  • 1 tablespoon white vinegar
  • 1 teaspoon Worcestershire sauce (optional, for extra depth)
  • Ranch or blue cheese dressing, for serving
  • Celery sticks, for serving


Instructions

  1. Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, garlic powder, onion powder, salt, and pepper.
  3. Pour in the milk and whisk until you have a smooth batter.
  4. Add the cauliflower florets to the batter and toss gently to coat each piece evenly.
  5. Arrange the battered cauliflower in a single layer on the prepared baking sheet.
  6. Bake for 20-25 minutes, or until the cauliflower is tender and lightly golden.
  7. While the cauliflower is baking, prepare the buffalo sauce. In a small saucepan, combine the buffalo hot sauce, melted butter, white vinegar, and Worcestershire sauce (if using). Heat gently over low heat, stirring until well combined. Do not boil.
  8. Once the cauliflower is baked, carefully remove it from the oven.
  9. Pour the buffalo sauce over the baked cauliflower and toss gently to coat all the florets.
  10. Return the coated cauliflower to the oven for another 5-10 minutes, or until the sauce is slightly caramelized and sticky.
  11. Serve immediately with ranch or blue cheese dressing and celery sticks.

Notes

  • For extra crispy bites, you can double-coat the cauliflower. Dip in batter, bake for 10 minutes, then dip again and bake for another 15-20 minutes.
