- 1 large head cauliflower, cut into bite-sized florets
- 1 cup all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup milk
- 1/2 cup buffalo wing hot sauce
- 1/4 cup melted butter
- 1 tablespoon white vinegar
- 1 teaspoon Worcestershire sauce (optional, for extra depth)
- Ranch or blue cheese dressing, for serving
- Celery sticks, for serving
Instructions
- Preheat your oven to 425°F (220°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together the flour, garlic powder, onion powder, salt, and pepper.
- Pour in the milk and whisk until you have a smooth batter.
- Add the cauliflower florets to the batter and toss gently to coat each piece evenly.
- Arrange the battered cauliflower in a single layer on the prepared baking sheet.
- Bake for 20-25 minutes, or until the cauliflower is tender and lightly golden.
- While the cauliflower is baking, prepare the buffalo sauce. In a small saucepan, combine the buffalo hot sauce, melted butter, white vinegar, and Worcestershire sauce (if using). Heat gently over low heat, stirring until well combined. Do not boil.
- Once the cauliflower is baked, carefully remove it from the oven.
- Pour the buffalo sauce over the baked cauliflower and toss gently to coat all the florets.
- Return the coated cauliflower to the oven for another 5-10 minutes, or until the sauce is slightly caramelized and sticky.
- Serve immediately with ranch or blue cheese dressing and celery sticks.
Notes
- For extra crispy bites, you can double-coat the cauliflower. Dip in batter, bake for 10 minutes, then dip again and bake for another 15-20 minutes.
- Adjust the amount of hot sauce to your preferred spice level.
- You can also air fry these cauliflower bites for an even crispier texture.
