Description

A simple recipe for a spicy and cheesy buffalo chicken quesadilla.

Ingredients

Scale
  • 1 cup cooked, shredded chicken
  • 1/2 cup buffalo wing sauce
  • 1/2 cup shredded Monterey Jack cheese
  • 1/2 cup shredded cheddar cheese
  • 4 large flour tortillas
  • 2 tablespoons butter or oil

Instructions

  1. In a bowl, mix the shredded chicken with the buffalo wing sauce until the chicken is fully coated.
  2. Heat a large skillet over medium heat and melt half of the butter or oil.
  3. Place one tortilla in the skillet. Sprinkle half of the cheese mixture over the tortilla.
  4. Spoon half of the buffalo chicken mixture over the cheese. Top with a second tortilla.
  5. Cook for 3 to 4 minutes per side, pressing gently with a spatula, until the tortilla is golden brown and the cheese is melted.
  6. Remove the quesadilla from the skillet, slice into wedges, and keep warm.
  7. Repeat the process with the remaining ingredients and butter/oil for the second quesadilla.

Notes

  • Serve with ranch or blue cheese dressing for dipping.
  • You can add a thin layer of cream cheese to the inside before adding the chicken for extra creaminess.
