Description

Enjoy a healthy and flavorful dinner with these Buffalo Chicken Stuffed Sweet Potatoes. This recipe offers a lighter take on classic buffalo chicken, using the natural sweetness of baked sweet potatoes as a delicious base. It’s a satisfying meal that’s perfect for a weeknight.

Ingredients

Scale
  • 2 large sweet potatoes
  • 1 cup cooked shredded chicken
  • 1/4 cup buffalo sauce
  • 2 tablespoons plain Greek yogurt
  • 1/4 cup crumbled blue cheese (optional)
  • 2 tablespoons chopped fresh chives or green onions
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash the sweet potatoes and prick them several times with a fork.
  3. Bake the sweet potatoes directly on the oven rack for 45-60 minutes, or until tender when pierced with a fork.
  4. While the sweet potatoes are baking, prepare the buffalo chicken filling. In a medium bowl, combine the shredded chicken, buffalo sauce, and Greek yogurt. Mix well until the chicken is evenly coated.
  5. Once the sweet potatoes are tender, carefully remove them from the oven. Let them cool slightly until they are easy to handle.
  6. Slice the sweet potatoes lengthwise, but not all the way through, creating a pocket. Gently fluff the inside with a fork.
  7. Spoon the buffalo chicken mixture into the pocket of each sweet potato.
  8. Top with crumbled blue cheese, if using, and chopped chives or green onions.
  9. Serve immediately and enjoy your delicious stuffed sweet potatoes!

Notes

  • You can use rotisserie chicken for a quicker preparation.
  • Adjust the amount of buffalo sauce to your spice preference.
  • For a dairy-free option, omit the blue cheese and use a dairy-free yogurt alternative.
  • Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. Reheat gently.
