Description
A quick, elegant pasta dish featuring cheese tortellini tossed in a light lemon-butter sauce with sweet peas, topped with salty prosciutto and creamy burrata.
Ingredients
Scale
- 1 pound tortellini (cheese or spinach recommended)
- 4 ounces prosciutto, thinly sliced
- 1 cup frozen or fresh peas
- 4 tablespoons unsalted butter
- 2 cloves garlic, minced
- 1/4 cup dry white wine or pasta water
- 2 tablespoons fresh lemon juice
- 1/2 cup heavy cream
- 1 (8 ounce) ball burrata cheese, torn into pieces
- Salt and black pepper to taste
- Fresh parsley, chopped, for garnish
Instructions
- Place the prosciutto slices on a baking sheet lined with parchment paper. Bake at 400 degrees F (200 C) for 8 to 10 minutes until crisp. Remove and set aside to cool, then roughly chop.
- Cook the tortellini according to package directions until al dente. Reserve about 1 cup of the pasta cooking water before draining.
- While the pasta cooks, melt the butter in a large skillet over medium heat. Add the minced garlic and cook for 1 minute until fragrant.
- Add the peas to the skillet and cook for 2 to 3 minutes until tender.
- Pour in the white wine or reserved pasta water and let it reduce slightly, about 1 minute. Stir in the lemon juice and heavy cream. Bring the sauce to a gentle simmer.
- Add the drained tortellini to the skillet. Toss gently to coat everything in the sauce. Add more reserved pasta water if the sauce seems too thick. Season with salt and pepper.
- Remove the skillet from the heat. Gently fold in half of the torn burrata pieces until they begin to melt slightly into the sauce, creating creaminess.
- Divide the pasta among serving bowls. Top each serving with the crispy prosciutto pieces and the remaining fresh burrata pieces. Garnish with fresh parsley.
Notes
- You can crisp the prosciutto in a dry skillet over medium heat instead of baking if you prefer.
- If you do not have heavy cream, you can substitute with an extra 1/4 cup of reserved pasta water and a tablespoon of grated Parmesan cheese for richness.
- Add the burrata right at the end, off the heat, to maintain its creamy texture.
