Description
Make this simple, flavorful soup combining tender cabbage, warming ginger, and savory miso paste for a quick, healthy meal.
Ingredients
Scale
- 6 cups vegetable broth
- 1 tablespoon fresh ginger, grated
- 4 cups green cabbage, thinly sliced
- 1/2 cup white or yellow miso paste
- 1 tablespoon soy sauce or tamari
- 1 teaspoon sesame oil
- 2 green onions, thinly sliced for garnish
Instructions
- Pour the vegetable broth into a medium pot and bring it to a simmer over medium heat.
- Add the grated ginger to the simmering broth and cook for 2 minutes.
- Add the sliced cabbage to the pot. Cook until the cabbage is tender-crisp, about 5 to 7 minutes.
- Remove the pot from the heat. In a small bowl, whisk a few tablespoons of the hot broth with the miso paste until smooth.
- Stir the dissolved miso mixture and the soy sauce into the soup pot. Do not boil the soup after adding the miso, as this can reduce its beneficial properties.
- Stir in the sesame oil.
- Ladle the soup into bowls and garnish each serving with sliced green onions.
Notes
- For a richer flavor, use a combination of white and red miso paste.
- If you prefer softer cabbage, simmer it for an additional 5 minutes before adding the miso.
- This soup is naturally vegetarian and can be made vegan by confirming your vegetable broth is vegan.
