- 4 cups shredded green cabbage
- 1 cup shredded purple cabbage
- 1/2 cup chopped fresh cilantro
- 1/4 cup thinly sliced red onion
- 1/4 cup olive oil
- 3 tablespoons fresh lime juice
- 1 tablespoon honey or agave nectar
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 jalapeño, seeded and minced (optional)
Instructions
- Place the shredded green and purple cabbage in a large bowl.
- In a small bowl, whisk together the olive oil, lime juice, honey or agave nectar, cumin, salt, pepper, and minced jalapeño, if using. This is your dressing.
- Pour the dressing over the cabbage mixture.
- Add the chopped cilantro and sliced red onion to the bowl.
- Toss all ingredients together until the cabbage is evenly coated with the dressing.
- Let the salad sit for 10 minutes before serving to allow the flavors to meld and the cabbage to slightly soften.
Notes
- For extra crunch and flavor, add 1/4 cup of toasted pumpkin seeds or chopped peanuts.
- To make this a main dish, add 1 cup of cooked, shredded chicken or black beans.
- If you prefer a softer texture, lightly salt the cabbage and let it sit for 15 minutes before rinsing and draining it completely before adding the dressing.
