  • 12 oz fettuccine pasta
  • 1 lb shrimp, peeled and deveined
  • 2 tbsp olive oil
  • 1 tsp Cajun seasoning
  • 1/2 tsp garlic powder
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 4 tbsp butter
  • 2 cloves garlic, minced
  • 1 1/2 cups heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley


Instructions

  1. Cook fettuccine according to package directions. Drain, reserving about 1/2 cup of pasta water.
  2. While pasta cooks, toss shrimp with olive oil, Cajun seasoning, garlic powder, salt, and pepper.
  3. Heat a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
  4. In the same skillet, melt butter over medium heat. Add minced garlic and cook for 1 minute until fragrant.
  5. Pour in heavy cream and bring to a simmer. Cook for 2-3 minutes, stirring occasionally, until slightly thickened.
  6. Stir in Parmesan cheese until melted and smooth.
  7. Add cooked fettuccine and reserved pasta water (if needed to reach desired consistency) to the skillet. Toss to coat pasta in sauce.
  8. Return shrimp to the skillet and toss with pasta and sauce.
  9. Garnish with fresh parsley before serving.
