Ingredients
Scale
- 12 oz fettuccine pasta
- 1 lb shrimp, peeled and deveined
- 2 tbsp olive oil
- 1 tsp Cajun seasoning
- 1/2 tsp garlic powder
- 1/4 tsp salt
- 1/4 tsp black pepper
- 4 tbsp butter
- 2 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1/2 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
Instructions
- Cook fettuccine according to package directions. Drain, reserving about 1/2 cup of pasta water.
- While pasta cooks, toss shrimp with olive oil, Cajun seasoning, garlic powder, salt, and pepper.
- Heat a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
- In the same skillet, melt butter over medium heat. Add minced garlic and cook for 1 minute until fragrant.
- Pour in heavy cream and bring to a simmer. Cook for 2-3 minutes, stirring occasionally, until slightly thickened.
- Stir in Parmesan cheese until melted and smooth.
- Add cooked fettuccine and reserved pasta water (if needed to reach desired consistency) to the skillet. Toss to coat pasta in sauce.
- Return shrimp to the skillet and toss with pasta and sauce.
- Garnish with fresh parsley before serving.
Notes
- Adjust Cajun seasoning to your spice preference.
- For a thicker sauce, simmer for an extra minute or two.
