Description

Ingredients

  • 1 pound large shrimp, peeled and deveined
  • 1 tablespoon olive oil
  • 2 tablespoons unsalted butter
  • 1/2 cup chopped yellow onion
  • 1/4 cup chopped green bell pepper
  • 1/4 cup chopped red bell pepper
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • 1/4 teaspoon cayenne pepper (optional)
  • 1 cup chicken broth
  • 1/2 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1/2 cup cooked grits
  • Salt and black pepper to taste


Instructions

  1. Pat the shrimp dry and season with salt and pepper.
  2. Heat olive oil and butter in a large skillet over medium-high heat.
  3. Add shrimp and cook for 1-2 minutes per side, until pink and cooked through. Remove shrimp from skillet and set aside.
  4. Add onion and bell peppers to the skillet and cook until softened, about 5 minutes.
  5. Stir in minced garlic, Cajun seasoning, and cayenne pepper (if using) and cook for 1 minute more until fragrant.
  6. Pour in chicken broth and heavy cream, scraping up any browned bits from the bottom of the skillet.
  7. Bring to a simmer and cook for 3-5 minutes, until the sauce begins to thicken.
  8. Stir in shredded cheddar cheese until melted and smooth. Season with salt and pepper to taste.
  9. Return the cooked shrimp to the skillet and stir to coat with the sauce.
  10. Serve the Cajun shrimp mixture over cooked grits.

Notes

  • For extra creamy grits, use stone-ground grits.
  • Adjust the cayenne pepper to your spice preference.
  • Garnish with chopped fresh parsley or green onions if desired.
